A Pretty Perfect Spring Weekend

Oh, how I love weekends.  This one in particular was fantastic.  Friday night Austin and I walked to dinner and had us a little dinner date.  Some Friday Night Lights was watched when we got home, and goodness I didn’t realize how much I had missed Tammy Taylor.  It had been ages since we’d watched an episode!  But, the obsession continues. 

Saturday morning my friend Cam and I ran on the Katy Trail and then did an awesome yoga class in the Arts District.  Apparently various yoga studios offer free classes there on most Saturday mornings.  The weather was absolutely perfect, and I can’t wait to do it again. 

Austin and I ran a few quick errands together on Saturday, and we ended our errands with some delish fro-yo.  It was warm and sunny outside, and fro-yo and fruit just sounded so tasty.

Saturday night we made a trip to McKinney to go to one of my coworker’s wedding.  It was beautiful, and my love for McKinney is well documented on this blog, so I was thrilled to be up in that part of the metroplex.

On Sunday we had a big day at church with the opening of our newly renovated floor for singles and young marrieds.  Our class had so. much. food. (breakfast tacos, pancakes, crazy doughnuts, sausage balls…and even more!) and we played games and had a ton of fun.  That afternoon we went and picked up Austin’s youngest sister, Casey, from Six Flags and spent the rest of the day hanging out with her.  We loved having her in the Big D! 

We went to Klyde Warren and walked around, walked through the art museum, showed her the pretty fountain at our new church, and played cards (Casey and I won all the games we played, for the record – Austin didn’t win any Winking smile).  We took her to Eatzi’s for dinner on the patio there and had a fabulous day with her!  

Tomorrow starts my May challenge, and I’m excited but also nervous about making a blog post happen every single day. Surely I can do it for a month, right?!

Hi Y’all

Today I wanted to do a little about me post to link up at Kelly’s Korner for her Show Us Your Life series.  Today’s (well, really yesterday’s…) link up was for girls in our 20s without babies – that’s me! 

I’m Emily, and this is my crazy husband, Austin.  We live and work in Dallas, TX and we have been married for almost two years.

We are in what I like to think of as the “career stage” of life.  We both have pretty demanding jobs (I am a lawyer and Austin is a CPA) and work a lot, but when we are not working, some of our favorite things are:

Being involved in our church – First Baptist Dallas – we love it so much! Come join us if you are ever in Dallas and looking for a church.

Exploring Dallas and being active.  We love the running trails that Dallas has to offer, and we recently started (attempting to play…) playing tennis.  I have a never-ending list of restaurants to try in Dallas, and we are both enjoying all of the fun things that come with living in such a big city.  I am also about to start my provisional year in the Junior League of Dallas, and I’m really looking forward to being involved in such an awesome organization! 

Going to Fighting Texas Aggie football games and being Aggie fans.  We met at Texas A&M in 2006 and we both have a deep love of our alma mater!

We also have a wonderful family that we love spending time with whenever we can.  They all live within driving distance of Dallas, so we get to see them a good bit, but not as much as we’d like, of course!

My parents and sisters above//Austin’s parents and sisters below.  We are both the oldest of three and both have two sisters who are the same ages as each other.  Our two middle sisters – Melanie & Courtney- are both teachers.  Courtney is getting married next month!  Our two youngest sisters – Mary Katherine & Casey – are finishing up their junior year of high school.

This blog is mainly just about our day to day lives as newlyweds and the funny things Austin does on a daily basis to make me laugh (exhibit A: this post).  My biggest fans of the blog are without a doubt my Mom, my father-in-law Buddy, and my wonderful grandparents.  They always let me know when my posts start getting infrequent! 

I started blogging in 2011 when I was waiting for my Bar Exam results and looking for a job.  During law school I discovered blogs and was hooked – I literally felt like I had discovered some secret world of fascinating people.  I read blogs for several years before taking the plunge to start my own, and these are some that have always been my favorites:

And let’s round this out with a few random facts:

  • Last year we went to A LOT of weddings.  And when I say a lot, I mean upwards of twelve weddings in one year.  I like to call that our year of weddings.  This year the wedding train has slowed down a little bit, although ironically we are going to a wedding tonight.  I am waiting for the baby boom to start any day now!
  • I love topiaries, birds, and nests more than one human should.  I have a topiary in my office and it brings me endless joy.  I also had to tell my friends and family to stop giving me bird-related gifts, because I have gotten to the point where my house is borderline bird-obsessed. 
  • I cannot function or go anywhere without my planner.  I joked to a girlfriend the other day that it is literally my lifeline – other than Jesus!   
  • My favorite way to spend my down-time is making cards.  Paper Source is my happy place, and I love to craft.  My mom and I share this love – she actually sends me a card of the month and has every month since January of 2011!  Each year’s cards have a different theme – 2011 was a year of bird cards (see, told you I love them), and 2012 was hand stitched cards.  I rotate the cards on their little rings every month as a picture calendar by my desk :)

And, finally, mainly to appease my grandmothers and Buddy, I am toying with the idea of doing this blogger challenge for the month of May.  Jenni from Story of my Life has put together a list of prompts and is encouraging bloggers to rise to the challenge and blog every day during May.  I think it’ll be fun!

WILW

So the Brooklyn Tabernacle Choir came to our church a couple of weeks ago, and I haven’t been able to get two songs that they sang out of my head since then.  Listening to these two on repeat. 

We made a “Brooklyn Tabernacle Choir” Pandora station yesterday, and I’m loving getting ready to that as my soundtrack in the mornings.  When they were at church, the mentioned that they have a new CD coming out soon – sign me up! 

On a totally unrelated note, lately I have been really into having a cup of coffee or tea in the afternoon.  Today I’ll be slumming it with tea from home, but Monday I treated myself to this cappuccino that was almost too pretty to drink.  I tried coffee at La Duni for the first time at a shower there a few weeks ago, and I absolutely loved it, so I went there Monday for this pick-me-up.

Weekending

We had a great relaxing Saturday morning breakfast to kick off our weekend.  I should back up just a little bit… we went to Stampede 66 with our Fort Worth pals Matthew & Mallory on Friday night.  None of us had ever been there before, and we all loved it.  Definitely a cool atmosphere and lots of good food to choose from!    photo (64)

We followed up our tasty dinner with a walk through Klyde Warren and some coffee back at the house.  And yes, Austin and Matthew thoroughly enjoyed the playground at KWP.

Saturday was a GORGEOUS day here in Dallas, and we enjoyed getting outside a little bit and even stopped by the North Texas Taco Festival in Deep Ellum.  If you are ever in need some good people watching, Deep Ellum is your spot…

Saturday evening we went to our Sunday school class crawfish boil and had such a great time!  Our friends Daniel & Kara did a wonderful job hosing, and all the food was delicious.  Well, except for the whoopie pies that I made on Saturday that didn’t actually make it to the party… Long story short I spent way too much time and effort and ended up thinking they looked horrible and dumping them in the trash.  We stopped on the way and got a cookie cake since I had signed up to bring a dessert!  I’m just kind of not thinking about how much of a disaster the whoopie pies were.

Austin also wants me to be sure to let anyone reading this know that he caught two HUGE fish in Daniel’s pond after the crawfish eating.  ;) I’m so proud!

The boys ended their night fishing while us girls ended our night circled up, covered up with blankets, and visiting with this gorgeous view.  It was such a great time with great friends!

Weekend Happenings

Thankfully, our weekend was pretty low key.  I went to a fun bridal shower brunch at La Duni on Saturday morning for one of my co-workers.  I had never been there, but I think I might have had the best cappuccino of my life.  I kind of haven’t been able to stop thinking about it or planning my next visit. 

After the shower, I did a little bit of shopping while Austin played golf with a friend, then we both came home and took a delightful nap.  This tasty rice and beans + guac was for dinner (thanks to ELR!), and then we went for a walk – perf Saturday nigh!

Sunday was church and a meeting after church, then on Sunday afternoon I went to Plano with Austin for his summer league lacrosse game.  Another couple from our Sunday School class was there, so I had a watching buddy, and then we all went to the new Newk’s in Plano after the game.  I was tickled that we drove right by Newk’s on our way to the game!  I have to say it wasn’t quite on the level of my beloved Newk’s in Jackson, but my salad did not disappoint.

Yesterday I was in a little bit of a funk, and hearing the terrible news from Boston made that even worse.  Sometimes it is just so hard living in this world!  I let myself get so discouraged by all of the bad things in the world, all of the people who don’t know Jesus, and sad circumstances that seem to affect so many.  Of course, this morning when I went to read my Proverbs 31 devotional, these are the key verses for today:

Proverbs 17:22, "A joyful heart is good medicine, but a crushed spirit dries up the bones."

Ephesians 3:16, "I pray that from his glorious, unlimited resources he will empower you with inner strength through his Spirit."

2 Corinthians 12:9 "And He said to me, 'My grace is sufficient for you, for My strength is made perfect in weakness.' Therefore most gladly I will rather boast in my infirmities, that the power of Christ may rest upon me."

Things on my “To Cook” List

There is something about having my fridge and pantry stocked that makes me feel so centered and on top of things.  This week work has just been crazy – so much for that regular blogging I mentioned in my last post… 4 days ago…  I have been putting off a grocery trip since Monday, and it is not going to happen until tomorrow.  Thank goodness for a relatively free weekend that is so so close!  I have got to get some cooking done so that meals are one less dilemma for us next week. 

This past Sunday, I actually did make a big pot of these crockpot oats, and they have lasted us all week and been so good to have on these chilly mornings we’re having.  I probably won’t do this again until the fall, but I’m definitely hanging onto the recipe.  My spring and summer breakfast staple is Greek yogurt, granola, and berries, and I don’t tend to stray too far from that until fall.
 

At the top of my list for this weekend is this simple recipe from Eat Live Run that I haven’t been able to get out of my head since spotting it on her blog earlier this week.  Side note: if you have never read Jenna’s blog before, you should.  All of her recipes are positively drool-worthy, and the ones I have tried have always turned out so good.  I think our Saturday night will consist of this and finally finishing last Sunday’s Mad Men premiere. 


Last week, I made a big batch of this yummy salad on Monday, and we had it for lunches all week.  It was so handy to have something delicious and packed full of vegetables to throw in a tupperware and take to work each day.  This recipe is so easy, and I will definitely rotate it in all spring and summer. 

This Martha recipe from Pinterest (where else?) is also happening in the near future.  Maybe not too close to the rice & beans above, but I do love me some rice and beans… must be those Louisiana roots. 

And finally, dessert… my mom tried this recipe for the first time recently, and ever since talking to her about it on the phone yesterday I haven’t been able to stop dreaming about it.  I made it last year for Easter lunch, and I’m thinking it is time I make it again.  So delightful!

Lately

Austin and I had such a fun date night last weekend at Whiskey Cake in Plano.  The whiskey cake was pretty darn delicious.  I highly recommend it, and the coffee is a must!

A Trip to Charleston!

We are headed to Charleston this summer, and the planning has begun.  I would welcome any must-dos or tips any of you have for the four days we will be spending in Charleston! 

So far, our list of things we plan to do includes:

  • Lunch at Magnolia’s
  • Charleston Cooks! – maybe a cooking class?
  • The City Market
  • Shopping on King Street
  • Boone Plantation
  • Middleton Place

Anything we should add to or subtract from our list?  I am looking so forward to walking around and taking in all of the pretty houses like those in the picture above.  Hurry up, summer!
