Crafty Beaver

Good gracious this week has gotten away from me!  I can’t believe it is already Thursday.  I have been looking forward to Thursday for several days now because tonight I get to go to a women’s fellowship at my church that is focused on rubber stamp notecard making!  We’ll just add that to the long list of things I love about our church. 

If you have seen any of my card posts, then you know this is right up my alley.  I cannot wait!  If I manage to make anything blog-worthy then I will definitely share.

Also on a crafty note, I can’t believe I missed the premier of Craft Wars on TLC!  I have been so excited for this show but completely forgot about it starting this week.  I’m hoping I can catch the first episode online this weekend.  Did anyone watch?

Weekend at the Ballpark

Our Friday night was spent at one ballpark and our Saturday afternoon at another. 


We had our first softball game of the season with our team from church, and we dominated (Austin insisted our jerseys were a bloggable moment)!  Austin was the very first person up to bat for our team and he hit a home run!  I actually managed to hit the ball both times I was at bat, but I got out both times.  Honestly, I am just amazed I was able to hit the ball seeing as how I have never played a day of softball in my life.  Despite my lack of on-base hits, our team won 13-1.  Woo hoo!

I did a little shopping on Saturday morning – might have to do some OOTD pics this week.  My most exciting find was a dress for football season!  We have season tickets this year for our SEC debut, so I’m trying to stock up on some game day wear.  Let me just tell y’all, it is HARD to find clothes with any amount of maroon that are both cute and wearable in 100 degree weather. 

Our friends Ryan and Cassie came to Dallas for the weekend, and we were so excited to see them and go to the Rangers game together.  Thanks to our wonderful Sunday School teachers Roy & Donna for the amazing tickets!  Cassie is a hardcore Rangers fan, and we had a great time at the game despite being drenched in sweat.  Summer in Texas is definitely here.

Sadly, the Rangers lost, but we still had a great time with Ryan and Cassie.  After we finally cooled off and got clean, we enjoyed a fun dinner at Momo’s.  Love that place! 

Our Sunday has been wonderfully relaxing, and now we are settling in to watch Food Network Star.  Weekends are the best.

The End of the Headboard Saga

I promise this will be my last boring post about headboards, but what I’m really loving is that we finally have one!  Last time I was at my parents’ house I came across a catalog for Home Decorators Collection.  I had never heard of this brand before, but I casually flipped through the catalog while chatting with my Mom.  I noticed the headboard section and started to get really excited when I saw the prices and the fabric options. 

Shortly after I returned to Dallas, a headboard was ordered.  Third time’s the charm! (See here and here for the disasters that were the first and second headboard I ordered) I would recommend HDC to anyone, and I will definitely be using them again in the future.  Their customer service is great and the headboard arrived so quickly! 

We (Austin) assembled the headboard this morning.  It only took thirteen months to get this done, but I am so relieved to finally have a headboard!

Homemade Applesauce Granola

Meet my new favorite breakfast!  I made some of this granola last night and could hardly wait to enjoy it for breakfast this morning.  If you are a granola fan like me, this is a recipe you should try.  An added bonus -your house will smell so good while it is cooking!


Homemade Applesauce Granola (recipe from Fake Ginger via Pinterest)


  • 2 ½ cups old fashioned oats
  • 1 cup nuts (pecans, walnuts, almonds)
  • ½ cup sunflower seeds
  • ¼ cup sesame seeds (I omitted these)
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup unsweetened applesauce
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 1/3 cup raisins (I omitted these)


  1. Preheat oven to 300.
  2. Mix together oats, nuts, seeds, sugar, cinnamon, and salt in a large bowl.
  3. In a small saucepan, warm applesauce with the honey and oil (low heat).
  4. Mix the applesauce mixture with the oat mixture and stir to coat.
  5. Spread the mixture onto a 9x13 baking pan. Bake for 45-50 minutes, stirring every 10 minutes, until granola is deep brown. Remove from oven and stir in raisins (if you are adding them).
  6. Let cool completely before enjoying.

This is a great base recipe for granola – thanks again Pinterest!  It could definitely be customized and changed/added to in so many ways.  I am kicking myself for never making my own granola until now seeing as how it is so simple and so delicious (and how buying it at the store is so expensive!).

Father’s Day Cards for our Dads

Happy father’s day to my wonderful Dad and father-in-law!  We love you both very much and are looking forward to our next visit.  I hope each of you has a wonderful day today.  We can’t wait to grill with y’all next time we see you.  (We got our dads what I can only describe as a box of meat from Omaha steaks for Father’s Day this year.)

Happy father’s day to all of our wonderful grandfathers as well – we love each of you! 



I made some bow tie cards for each of our dads earlier this week.  I was crossing my fingers that they would arrive on Saturday, but they might make a one-day-late appearance on Monday.  At least they will be on time on the blog!

The McDonald Wedding Weekend

We celebrated one of the happiest couples I have ever seen this weekend.  Matthew and Mallory were just beaming all night at their beautiful wedding!  Austin and I are so very happy for them and also very excited that they will be joining us in DFW when they get back from their honeymoon.  It was such a treat to be there for their wonderful wedding!

I LOVED the boy’s outfits!  They all looked so precious in their seersucker bowties. 

It was so wonderful to get to catch up with our great friends the Boehms and the newlywed Sheffields! We also loved getting to spend some time with college pals now that we are all grown up and living in different cities.

Of course, the wedding cakes were a highlight, as always.  Congratulations Matthew & Mallory – we are SO THRILLED FOR Y’ALL!

Today we had a fun lunch at Newk’s (best salad ever!!) with our friends Katie and Jeremy in Tyler before heading back to Dallas.  I am borderline obsessed with Tyler, so I loved every second of driving around there before we came back home.

Tuesday Night Fun

Just wanted to pop in and tell y’all that you should definitely try the recipe we had for supper tonight!  I got it from Real Simple, and we both really enjoyed it.  The veggies mixed in with the couscous add the perfect summery touch. {pic from the RS website}

Austin and I just got done with some softball “practice.”  We are playing on a team with our church and have been enjoying tossing the ball around in the evenings.  I am getting kind of excited for our first game next week!  Having never played softball in my life other than maybe one intramural game in college, it should be an experience. 

Now, I’m counting down to my favorite Tuesday night show – Pregnant in Heels.  I mainly just watch to listen to Rosie Pope talk and look at her pretty maternity clothes! 

So, to summarize, delish supper + softball + Rosie = a great Tuesday night in my book :)

Weekend Fun + Guacamole Recipe

This weekend has been wonderfully relaxing.  It has most definitely lived up to the high expectations I set on Friday afternoon.  The perfectly sweet watermelon enjoyed by the pool on Saturday helped.  The guacamole and blue corn chips were another key factor, and the grilled burger on Saturday night after a day at the pool was the perfect finishing touch to a day of great food and fun.  Now that I think about it, we packed a lot of what I think of as “summer food” into one day yesterday.

I kind of make up my guac recipe as I go every time I make it, but here’s what I did yesterday in case any of you are headed to a pool soon!  P.S. the seeds are in there because I saw somewhere that it helps the guac not to turn brown so quickly. 

7 ripe avocados, rough chop 

juice of one large lemon

1 vine-ripened tomato, diced

lots of salt

a little bit of pepper

a little bit of garlic salt

fresh cilantro, chopped

I just put everything in a bowl, mash up some of the avocado chunks with a fork, and season to taste.  This is really tasty with blue corn chips. Austin and some of our friends put some of the leftover guac on their burgers last night and said that was pretty good too! 

I would have taken a picture of our burgers (they were so good!), but I inhaled mine too quickly.  There’s just nothing like a good grilled burger (aka GGB). Smile Right Mom and Em?

Today we FINALLY got to go to church and Sunday school after a long 4 weeks of being out of town.  We missed it so much!  Our Sunday school class went to lunch at Fadi’s after church – so good!  Shout out to our friends Jaime and Emily for the recommendation!  If you live in Dallas and like Mediterranean food, you must go here.  I have been raving to Austin about how good it was all afternoon. 

I just finished a delightful nap and we are getting ready to watch Food Network Star – do any of y’all watch that show?  My family has been obsessed for years! 

My favorite contestant ever – Lisa Garza - has a restaurant here in Dallas, but I have yet to pay Sissy’s a visit.  Definitely on my “to do in Dallas” list.

A Weekend at HOME

Being out of town for four weekends in a row has me all kinds of excited to spend the next two days in Dallas, NOT in a car or on a highway, and catching up on everything that jus doesn’t seem to get done during the week. 

I got off work early today (hallelujah!), and I have not been this excited for a weekend of nothing in a looong time.  On our “agenda” for the weekend: movie night, some pool time, pool-side grilling, and a run at White Rock.  Also some random bill paying and house chores, but I can honestly I am even excited for those mundane little things!  Quite the Friday-high I am on right now. 

Hope you all enjoy your weekends wherever you may be. I’m off to enjoy the sunshine outside and celebrate not being in an office right now!

Our Weekend

The weddings continue!  We had so much fun celebrating with our friends Paige and Travis this weekend in Austin at their wonderful wedding.  I somehow only came out of the weekend with one picture from the rehearsal dinner, but I can assure you that the wedding itself was beautiful and the bride and groom had some of the biggest smiles I have ever seen!

We joked this weekend that weddings are the new date party, and really that is so true.  Now, weddings are the place we see everyone and catch up.  We even rode on a bus to and from the reception at this weekend’s wedding!  We loved getting to catch up with our A&M friends who are spread out all over Texas. 

Since our dates were in the wedding party, I got to have some good visiting time with these two.  Only two weeks until we get to do it all again at Mallory & Matthew’s wedding!


We also loved that this wedding was in Austin, which meant we got to see Austin’s family.  Buddy fixed us a feast of ribs and grilled corn for lunch on Saturday, and we followed that up with some relaxing pool time.  It has been so nice during this “wedding season” that a lot of the weddings are in Austin.  We have enjoyed the frequent visits :)

We were on the road on Sunday morning but were able to go to Sunday night church yesterday.  Considering that we have been out of town so much this month, it was SO NICE to be back at our church.  We have really missed it and seeing our church friends!  This weekend we will actually be in Dallas, and I couldn’t be more excited.

Hiking at Enchanted Rock

We spent one morning in Fredericksburg hiking the beautiful Enchanted Rock just outside of town.  If you know me at all, this will likely come as a shock considering I am not much of a “hiker.”  At all.  As in, I used to whine and cry when my parents would make us go on hikes on vacation… I am happy to say I think I have grown out of that!  I actually really enjoyed this hike and the beautiful scenery in the Texas Hill Country. 


It is so easy to get in that “vacation mode” of eating a lot of good food and not working out, which is not the best combo for me.  Getting outside and getting some exercise was a great way to start our Sunday.

There was definitely some squealing when we came across this little guy.  Kind of gross! We also saw a black squirrel, which was scary looking as well as too quick for my camera. 


If you ever find yourself in the FBG area, we definitely recommend hiking at Enchanted Rock!

Happy Friday, everyone.  I’m loving that this week has FLOWN by thanks to having Monday off.  We are off to what is sure to be another fun wedding this weekend, and I must go pack!
